Once the bacon slices have cooked, let them cool and then chop into bits. You can always make up extras and use them to top salads or future sandwiches!
Gather the rest of your ingredients. Spread cream cheese on one piece of bread and spread jalapeno pepper jelly on the other half.
On one side of the sandwich sprinkle the bacon bits and place a piece of the Colby jack cheese. Put your sandwich together.
Warm up a griddle or a frying pan, be sure and place a little bit of butter or oil in the pan so nothing will stick. Place your sandwich in the middle of the pan and spread a little more butter or spray a bit of oil on the top of the sandwich. Place a grill press on the top of the sandwich. Cook the bottom of the sandwich for a few minutes until it turns brown and then carefully flip the sandwich. Put the grill press on the top. Grill again for a few minutes until the cheese has melted inside the sandwich.
Cut in half and serve warm and gooey. Yum!
