Easy Chocolate Meringue Cookie Recipe
When you are looking for something different to make for a little treat, you’ve got to give these Chocolate Meringue Cookies a try. They have such a light and delicate taste. They can also be the perfect recipe to make if you have lots of eggs that you need to use up!
These are wonderful, crisp cookies that are filled with chocolate flavor but not filled with as many calories as typical cookies. These are naturally gluten-free.
Ingredients in Meringue Cookies
What you need:
- Egg Whites. I use fresh egg whites from fresh eggs in this recipe and I have not used the egg white liquid from the store. Save the egg yolks to use in other recipes.
- Vanilla Extract. Use Homemade Vanilla Extract or store bought to give this cookie a little more flavor.
- Sugar. This recipe uses plain white sugar and not brown sugar. I have not tried it with a sugar alternative and don’t think they would turn out right.
- Cocoa Powder. You want to use unsweetened cocoa powder in this recipe. I haven’t tried it with hot chocolate mix but I think that would be a fun experiment!
Step by Step Instructions for Making Chocolate Meringue Cookies
Begin by whipping the egg whites and the vanilla together. You will need a large bowl and a hand mixer (or a stand mixer if you have one) to do this.
Continue to whip the egg whites until they get very fluffy and form soft peaks. (You do not want to whip them until the stiff peaks form.)
Slowly fold in the cocoa and the sugar and continue to whip together. Try not to over-whip. Turn off your mixer as soon as all of the ingredients have been incorporated.
Drop by spoonful on a greased cookie sheet. I’ve used a plastic bag to drop mine on the sheet to make a little extra pattern in the cookies. You can also just use a spoon and make a large dollop. If you have one, you can use a piping bag to make them a more perfect shape or fancy design.
Bake in the oven at 300F for 30-35 minutes. Do not remove them from the oven earlier, or they will deflate. If you make 2 trays of cookies as shown here, be sure to switch the trays so that each will be able to spend time on the bottom of the oven.
After you take them out of the oven, let them cool a bit. Enjoy them!
Fun Variations for the Easy Chocolate Meringue Cookies
- For an extra chocolatey taste, you can also melt some chocolate chips, take the cookies, and dip half of them into the melted chocolate. Let them dry on wax paper. You could also use sprinkles or add chopped nuts like walnuts, pecans, or hazelnuts.
- Replace the cocoa powder with powdered freeze-dried strawberries for strawberry meringue cookies. You could dip these in chocolate too!
- Replace the vanilla flavoring with mint for a chocolate mint cookie.
- Replace the vanilla extract with orange extract and/or orange zest for an orange chocolate cookie.
Tips for Making Easy Chocolate Meringue Cookies
Meringue Cookies should be able to stay good up to 2 weeks if stored in an air-tight container. This recipe makes about 20 cookies so if you have a family that loves cookies, they won’t last long!
They are very light and crunchy since they are basically made from egg whites. The chocolate recipe helps to give them a yummy flavor. Think chocolate crackers but lighter.
It’s possible that they were not cooked long enough or were not able to cook on the bottom. I recommend trying a pre-heating stone baking sheet for cooking to ensure that they get done on the bottoms and don’t leave you with a sticky mess. The final product should be crisp and not chewy.
If you have any left after enjoying them, place them in an airtight container and store on the countertop at room temperature.

I made these for my family but I think I made them too big. They didn’t like them. 🙁
I made these the other day but added my own little twist I put mini chocolate chips in them. I have tried to make meringue cookies before and I could not get the egg whites to whip up this time they came out perfect. Thank you for this recipe I hope my in laws like them they are being used as gifts.

When I added the cocoa and sugar my mixture which was nice and fluffy went flat and the cookies ended up being flat as well. Any idea what happened?

About how longboard do these stay good for? Can they be frozen?
I haven’t tried freezing them and I’m afraid that they never last long in our house so I’m not sure of how long they would last.
I tried making these and they came out terrible, the mixture came out super liquidy and I dont know what happened. They were very flat. I even tried a second batch that i hand mixed thinking i over mixed and it still came out the same way. I feel like i am missing a key ingredient to thicken them up. What did I do wrong?
The recipe states, “Chocolate chips, optional. for coating.” Please include directions.
The directions are under the variations. I’ll move that away from the ingredients though since it looks a little confusing.
